Crafted with passion in our traditional 100L copper pot still, Dara Gin is a bold and beautifully balanced gin, distilled with a carefully selected blend of eight premium botanicals.
From the first sip, you’ll experience the crisp, piney freshness of juniper, perfectly complemented by the warm spice of coriander and the bright zest of lemon and orange peel. A delicate floral touch from elderflower and chamomile adds a smooth elegance, while angelica and orris root provide an earthy depth that lingers on the finish.
This handcrafted gin is exceptionally smooth, aromatic, and versatile – perfect for a refreshing gin & tonic, a classic martini, or simply enjoyed over ice.

In the heart of Ayrshire, our family began a journey with something simple – a love of craft and the idea that gin could be more than just a drink. It could be a story, a tradition, a connection. What started as small-batch experiments in flavour soon grew into something much deeper: a way to bring people together and to celebrate the land and heritage we call home.

Now, as we carefully restore and breathe new life into another old building, this journey continues with the next generation. Our son steps forward to carry on what we began – shaping Dara Gin into its future.

Named from the Gaelic word for oak, Dara stands for strength, roots, and growth – values we’ve held close as a family. Just like the oak, this gin is both grounded and ever-growing, marrying delicate botanicals with time-honoured tradition. Dara is refreshing, modern, and crafted with care, yet it carries the weight of heritage and the promise of what lies ahead.

Dara Distillery takes its name from the Gaelic word ‘dair’, meaning ‘oak tree’. In Celtic culture, the roots of trees connect to ancestors and all living things. The brand design of Dara Gin therefore utilises the perfect visual metaphor representing the connection between all things natural as well as the people’s connection to each other and their ancestors.

After our precise distillation process and mix of natural ingredients, we suggest serving as follows: one part Dara Gin to three parts premium tonic. Garnish with a slice of lime and cucumber with fresh mint over ice for a deep-rooted, delightfully balanced taste that is bottled in small batches for your unique enjoyment.

The Dara Knot is often said to represent the endless cycle of life, death, and rebirth, as well as the interconnectedness of all things in the natural world. In Celtic culture specifically, Celtic knots have a deep significance and are often associated with the ancient Celtic Gods and Goddesses.
